Veggies Tortilla

(Serves one)


2 eggs or 1 white, 1 egg                                                       2 whole mushrooms,

1/4 green pepper                                                                 1/4 cup of grated cheese

1/2 annaheim chili                                                              2 slices of onion

1tsp oil                                                                                   salt and pepper to taste

a dash of milk or creamer (optional)

Dice the pepper, the onion, the chili and the mushrooms.  In a separate container beat the eggs, and add the salt, the pepper and the milk or creamer. Then add the pepper, oninon, chilli, mushroom and cheese. On a non-stick pan, add the oil and keep it on maximum heat until it’s hot. Pour the mixture into the pan and reduce the heat to low. Wait until you see it is cooked from the bottom up, if you wish to turn it, do so until you can see it is thoroughly cooked,
